Located near Auxerre in the Yonne department, the Chablis vineyard runs along a small river with a predestined name: the Serein. The first traces of vines in Chablis date back to Roman times. From the 12th century, Cistercian monks were able to develop its culture. Established in January 1938, the Chablis Appellation d'Origine Contrôlée confirms the excellence of this dry white wine which, better than wines from other vineyards, has managed to maintain its first rank thanks to a quality grape variety (chardonnay) throughout its history.
